Our Devon Ruby Beef

Devon Ruby beef is recognised across the world as the taste yardstick for beef. This slow-maturing breed produces a succulent well-marbled meat. We ensure this depth of  flavour and tenderness by hanging the meat for three weeks. Our cattle are fed naturally on our own good grass and hay that we cut for the winter months. They also get the occasional treat of a handful of suckler rolls so that we can get them to follow us without having to use a sheep dog.

BRAISING STEAK

Braising Steak contains more muscle and so needs to be cooked gently to tenderise it. Fab for a beef pie with crisp potato crust.

BRISKET

£6.60

Suitable to roast, pot roast, or boil if salted. Especially good cooked in beer with root vegetables.
 

SPICED CURED BRISKET £8.50 Beautifully aromatic and spicy.

CHUCK STEAK

Why not try diced Chuck Steak and roasted red peppers, slowly cooked in a Stilton and Ale gravy, with seasonal vegetables. Serve with chips, new potatoes or potato mash.
 

FILLET STEAK

Fillet Steak lends itself to grilling or frying in a light olive oil until medium/rare. So many recipes, so little time.

FORE RIB

A moist, succulent cut as it is 'marbled' with fat. Suitable as a joint to roast, or steaks to grill or fry.
 

MINCE

Delicious in Shepherd’s Pie or Beef Lasagne or for making meatballs.
 

RUMP STEAK

Rump Steak is often considered the best steak for flavour, though it’s not as tender as fillet.

SHIN

Slow cooking help tenderise the tough but flavoursome meat of Shin making it ideal for stew or hotpots.
 

SILVERSIDE

Suitable for a slow and frequently basted roast. Or simmer with carrots and dumplings.
 

SIRLOIN JOINT

Sirloin is the premium cut of beef. It is more tender and so will taste better with less cooking. Excellent as a roast.

TOPSIDE

This is the most tender part of the round. It’s perfect for a family roast Sunday Lunch or a poached-with-spices mid-week dinner.

Normally packed in 500gm trays of four (quarter pounders), but orders happily taken for bulk quantities at a discount.
